A vibrant and refreshing Mosaic Beet, Mango & Avocado Tartare Stack that layers roasted beets, ripe mango, and creamy avocado into a visually stunning and nutritious appetizer or light meal. This no-cook assembly highlights the natural sweetness and earthiness of the ingredients, delivering a delightful combination of textures and flavors.

Ingredients

For the Crust:

  • 2 medium beets, roasted and diced
  • 1 ripe mango, peeled and diced
  • 2 ripe avocados, peeled and diced

Instructions

  1. Roast the Beets: Preheat your oven to 400°F (200°C). Wrap the beets in aluminum foil and roast for about 45 minutes or until tender when pierced with a fork. Allow them to cool, then peel and dice into small cubes.
  2. Prepare the Mango and Avocado: Peel and dice the mango and avocados into cubes similar in size to the beets to ensure uniform stacking and texture.
  3. Assemble the Tartare Stack: Using a ring mold on a serving plate, layer the diced beets, mango, and avocado carefully to create distinct layers. Press gently to compact the stack and achieve a neat shape. Remove the mold carefully.
  4. Serve Immediately: Serve the tartare stack immediately to enjoy the fresh flavors and prevent the avocado from browning. Optionally, garnish with fresh herbs or a light drizzle of lemon juice for added brightness.

Notes

  • Roasting beets brings out their natural sweetness and softens them for a better texture contrast with the mango and avocado.
  • Ensure the avocado is ripe but firm to maintain shape and prevent mushiness in the stack.
  • Serve immediately after assembly to keep the avocado fresh and prevent discoloration.
  • Optional garnishes include fresh cilantro, mint, or a sprinkle of toasted seeds for added crunch.
