Enjoy a classic Fresh Cherry Crisp with juicy cherries baked under a crunchy oat and nut topping. This easy-to-make dessert balances sweet-tart cherries with a buttery, cinnamon-infused crisp layer, perfect for a comforting treat any time of year.

Ingredients

For the Cherry Filling:

  • 5 cups fresh cherries, pitted and halved
  • 1/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • 1/2 teaspoon vanilla extract

For the Crisp Topping:

  • 3/4 cup old-fashioned oats
  • 1/2 cup all-purpose flour
  • 1/3 cup brown sugar
  • 1/4 cup chopped pecans or walnuts (optional)
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 6 tablespoons unsalted butter, cold and cubed

Instructions

  1. Preheat the oven: Preheat your oven to 350°F (175°C) to ensure it reaches the right temperature for even baking of the cherry crisp.
  2. Prepare the cherry filling: In a large mixing bowl, combine the pitted and halved cherries with granulated sugar, cornstarch, lemon juice, and vanilla extract. Toss everything together until the cherries are evenly coated. Pour this mixture into a greased baking dish to prevent sticking.
  3. Make the crisp topping: In a separate bowl, mix together the oats, all-purpose flour, brown sugar, chopped nuts if using, ground cinnamon, and salt. Cut the cold, cubed unsalted butter into this mixture using a pastry cutter or your fingers until the topping becomes crumbly.
  4. Assemble and bake: Evenly sprinkle the crumbly topping over the cherry filling in the baking dish. Place the dish in the preheated oven and bake for 35 to 40 minutes, until the topping is golden brown and the cherry filling is bubbly.
  5. Cool and serve: Remove the cherry crisp from the oven and allow it to cool for 10 to 15 minutes before serving to let the filling set slightly and avoid burns.

Notes

  • For a nut-free version, omit the chopped pecans or walnuts.
  • Ensure cherries are pitted well to avoid any bites into pits.
  • Serve warm with vanilla ice cream or whipped cream for added indulgence.
  • Leftovers can be stored covered in the refrigerator for up to 3 days and reheated before serving.
  • You can substitute frozen cherries if fresh are not available, just thaw and drain excess juice before using.
