A quick and delicious Chicken Avocado Melt Sandwich combining creamy mashed avocado, tender shredded chicken, and melted cheese toasted to golden perfection on sourdough bread. Perfect for a satisfying lunch or light dinner.

Ingredients

Sandwich Ingredients

  • 2 slices of sourdough or artisan bread
  • 1/2 ripe avocado, mashed
  • 1/2 cup cooked shredded chicken (grilled or rotisserie)
  • 2 slices of cheddar or Monterey Jack cheese
  • 1 tbsp mayonnaise or aioli (optional)
  • 1 tsp lemon juice
  • 1 tbsp butter for toasting
  • Salt and pepper to taste
  • Optional add-ins: sliced tomato, red onion, or crispy bacon

Instructions

  1. Prepare the avocado spread: In a small bowl, mash the avocado with lemon juice, salt, and pepper until smooth and well combined. This mixture will add creaminess and a fresh tang to the sandwich.
  2. Assemble the sandwich: Spread mayonnaise or aioli on one side of each bread slice if using. On the other side of one slice, evenly spread the avocado mixture, then layer with the shredded chicken and cheese slices. Top with the second slice of bread, mayo side facing out.
  3. Toast the sandwich: Heat butter in a skillet over medium heat. Once melted and sizzling, place the sandwich in the skillet and grill for 3 to 4 minutes per side. Press gently with a spatula to ensure even toasting and melting of the cheese until the bread is golden brown and the cheese is gooey.
  4. Serve: Remove the sandwich from the pan, slice it in half, and serve hot immediately. Optionally add sliced tomato, red onion, or crispy bacon for extra flavor and crunch.

Notes

  • Use ripe avocado for the best creamy texture and flavor.
  • You can substitute mayonnaise with any flavored aioli or leave it out for a lighter sandwich.
  • Grilled or rotisserie chicken works best for easy prep.
  • Feel free to customize with your favorite cheese or add fresh veggies.
  • Pressing the sandwich while toasting helps melt the cheese evenly and crisp the bread.
