Indulge in rich, fudgy brownies topped with fresh strawberries and a luscious chocolate ganache. This Chocolate-Covered Strawberry Brownies recipe combines the classic decadence of brownies with the refreshing burst of strawberries and a glossy chocolate topping, perfect for any dessert lover.

Ingredients

Brownie Base

  • 1 box brownie mix (for a 9×13 inch pan), plus ingredients listed on the box (typically eggs, oil, and water)

Topping

  • 1 lb fresh strawberries, hulled and halved
  • 1 1/2 cups semi-sweet chocolate chips
  • 1/2 cup heavy cream

Instructions

  1. Prepare the Brownies: Preheat your oven to 350°F (175°C). Prepare the brownie batter as directed on the box, usually by mixing brownie mix with eggs, oil, and water. Pour the batter into a greased 9×13 inch baking pan and bake for about 25 minutes or until a toothpick inserted comes out mostly clean. Remove from oven and allow to cool completely to room temperature.
  2. Add Strawberries: Once the brownies have cooled, arrange the halved strawberries cut-side down neatly over the top of the brownies, covering the surface evenly.
  3. Make Ganache: Heat the heavy cream in a small saucepan over medium heat until it just begins to simmer. Remove from heat and immediately pour the hot cream over the semi-sweet chocolate chips in a heat-proof bowl. Let sit for 2-3 minutes, then stir gently until the chocolate is fully melted and the ganache is smooth and glossy.
  4. Top with Ganache: Pour the chocolate ganache evenly over the strawberries and brownie base. Use a spatula to spread it gently to cover the surface completely. Place the pan in the refrigerator and chill for at least 1 hour or until the ganache is set.
  5. Serve: Once set, slice the brownies into squares. Serve chilled or at room temperature for the best texture and flavor.

Notes

  • Make sure the brownies are completely cool before adding strawberries and ganache to prevent melting.
  • You can use dark or milk chocolate chips instead of semi-sweet for different flavor profiles.
  • For easier slicing, refrigerate brownies until ganache is firm.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
