A refreshing and light Dilly White Bean Cucumber Salad featuring creamy white beans, crisp cucumbers, and radishes tossed in a zesty lemon-dill vinaigrette. This simple no-cook salad is perfect as a healthy side dish or a quick lunch option with vibrant, fresh flavors.

Ingredients

Vinaigrette

  • 1 garlic clove, minced
  • Juice of 1 small lemon (about 2 tablespoons)
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • Black pepper, to taste

Salad

  • 2 (15-ounce) cans white beans, rinsed and drained
  • 2 Persian cucumbers, thinly sliced (or 1/2 a large cucumber)
  • 5-7 radishes, cut into matchsticks
  • 0.75 oz fresh dill, stems removed and finely chopped
  • 2 green onions (green and white parts), thinly sliced

Instructions

  1. Make the Vinaigrette: In a small bowl, combine the minced garlic, lemon juice, extra virgin olive oil, Dijon mustard, salt, and black pepper. Whisk the mixture thoroughly and set aside for 5 minutes to allow the lemon juice to mellow the raw garlic’s sharp flavor.
  2. Make the Salad: In a large bowl, add the rinsed and drained white beans, thinly sliced cucumbers, radish matchsticks, chopped fresh dill, and sliced green onions. Pour the prepared vinaigrette over the salad ingredients and gently toss until all components are evenly coated. Taste and adjust seasoning with additional salt and pepper if needed.
  3. Serve: Serve the salad immediately for a crisp texture or refrigerate for 15 to 30 minutes to let the flavors meld together. Leftovers will keep well in the fridge for up to 5 days.

Notes

  • This salad is best served fresh but can be made ahead and refrigerated for enhanced flavor melding.
  • Use Persian cucumbers for the best texture and flavor; alternatively, seed and thinly slice regular cucumbers.
  • Rinse canned white beans well to reduce sodium and improve taste.
  • Adjust garlic quantity based on your preference for pungency.
  • Serve as a side dish or toss with greens for a light main course.
