Ingredients

Shrimp

  • 1 lb shrimp, peeled and deveined
  • 1/2 tsp salt

Garlic Butter Sauce

  • 3 tbsp butter
  • 4 cloves garlic, minced
  • 1 tbsp lemon juice
  • 2 tbsp chopped fresh parsley
  • 1 tbsp chopped fresh dill

Creamy Herb Rice

  • 2 cups cooked rice
  • 3 tbsp butter (2 tbsp for rice + 1 tbsp additional for sauce as per step 3 – combined)
  • 1/2 cup heavy cream
  • 1/2 cup chicken broth
  • 1/4 cup grated Parmesan cheese
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Sear the Shrimp: Heat olive oil in a skillet over medium-high heat. Pat shrimp dry and season with salt and pepper. Sear shrimp for 1 to 2 minutes on each side until they turn opaque. Remove shrimp from skillet and set aside.
  2. Prepare Garlic Butter Sauce: Lower the heat to medium and melt butter in the same skillet. Add minced garlic and sauté for about 1 minute until fragrant. Stir in lemon juice, return the shrimp to the skillet, and toss to coat all shrimp evenly with the garlic butter sauce. Remove from heat and set aside.
  3. Make Creamy Herb Rice: In a saucepan, melt butter along with a small amount of olive oil. Add the cooked rice to the pan, then pour in the heavy cream and chicken broth. Simmer the mixture gently until it slightly thickens, stirring occasionally. Stir in the grated Parmesan cheese, chopped parsley, chopped dill, salt, and pepper to incorporate all flavors evenly.
  4. Assemble the Bowl: Spoon the creamy herb rice into serving bowls first. Top each portion with the garlic butter shrimp. Drizzle any extra garlic butter sauce over the shrimp and rice. Garnish with additional fresh herbs or lemon zest if desired for added freshness and color.
