Ingredients

For the Mushrooms:

  • 400 grams sliced cremini mushrooms
  • 2 tablespoons salted butter
  • 1 tablespoon olive oil
  • 1 tablespoon Worcestershire sauce
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper

For Cheese Spread Mixture:

  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 2 tablespoons melted butter
  • 2 cloves garlic, finely minced
  • 1 tablespoon dried onion flakes
  • 1/4 teaspoon ground black pepper
  • 1/2 cup grated parmesan cheese
  • 1/2 cup grated havarti cheese
  • 1/2 cup grated swiss cheese
  • 1/2 cup mozzarella cheese
  • 1/4 cup green onions, thinly sliced

Other Ingredients:

  • 4 slices sourdough bread

Instructions

  1. Sauté Mushrooms: In a large skillet over medium-high heat, heat the olive oil and butter until butter is melted. Add sliced cremini mushrooms, salt, and ground black pepper. Stir to coat and cook for 5 minutes.
  2. Add Worcestershire and Continue Cooking: Stir in Worcestershire sauce, then cook mushrooms for another 5 minutes until they turn a deep brown color. Remove from skillet and transfer to a plate to cool. Separate out the nicer looking mushroom slices for topping; set aside the smaller or broken pieces.
  3. Prepare Cheese Spread: In a bowl, whisk together mayonnaise, sour cream, and melted butter until combined. Add minced garlic, dried onion flakes, and ground black pepper, stirring well. Fold in the parmesan, havarti, swiss, mozzarella cheeses, and green onions until evenly mixed. Set aside.
  4. Toast Bread: Arrange sourdough bread slices in a single layer on a sheet pan. Broil in the oven until the top side is lightly browned. Flip and toast the other side similarly. Remove and allow to cool slightly until warm to the touch.
  5. Assemble Toasts: Fold the cooled sautéed mushrooms (excluding reserved pieces) into the cheese spread mixture. Spread this mixture evenly onto each slice of toasted bread.
  6. Top and Broil: Place the reserved mushroom slices on top of the cheese spread toast. Return the sheet pan to the oven and broil at 500°F for 3-5 minutes, watching carefully, until the cheese bubbles and browns to your liking, making sure the cheese melts completely.
  7. Garnish and Serve: Remove from oven, sprinkle extra green onions on top for garnish, and serve immediately while warm and gooey.
