Ingredients

Meat and Seasoning

  • 1 lb ground beef
  • 1 packet taco seasoning (or homemade blend)

Fillings

  • 1 cup cooked white rice
  • ½ cup sour cream
  • ½ cup nacho cheese sauce
  • ¼ cup chipotle sauce
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese

Wrap and Cooking

  • 4 large flour tortillas
  • Butter or oil for grilling

Instructions

  1. Cook the Beef (8–10 mins): Brown the ground beef in a skillet over medium heat, breaking it up as it cooks. Once browned, drain any excess grease. Add the taco seasoning along with ¼ cup water, stir well, and allow to simmer for 5 minutes until the beef is fully seasoned and the mixture thickens.
  2. Warm the Tortillas: Heat the flour tortillas on a dry skillet for a few seconds on each side or microwave briefly. This softens them, making them easier to roll without cracking.
  3. Assemble the Burrito (5 mins): Lay a warmed tortilla flat on a clean surface. Layer with cooked white rice, then seasoned ground beef. Add spoonfuls of nacho cheese sauce and chipotle sauce, followed by sour cream. Sprinkle the shredded cheddar and mozzarella evenly on top.
  4. Grill the Burrito (3–4 mins per side): Heat a clean skillet over medium heat and lightly butter or oil it. Sprinkle 2 tablespoons of shredded cheese onto the skillet to create a crispy crust. Place the assembled burrito seam-side down on top of the melting cheese. Grill until the cheese forms a golden crispy crust and the burrito seals, about 3–4 minutes. Carefully flip and repeat on the other side until both sides are golden and crispy and the cheese inside is melted.

  • For extra spice, add more chipotle sauce or diced jalapeños inside the burrito.
