  • 2 tbsp (30 ml) hot honey
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp ground cinnamon
  • Salt and black pepper, to taste

Instructions

  1. Preheat and Prepare Sweet Potatoes: Preheat your oven to 200°C. Toss the diced sweet potatoes with half of the olive oil (15 ml), paprika, garlic powder, cinnamon, salt, and black pepper. Spread the sweet potatoes evenly on a baking sheet to ensure they roast uniformly.
  2. Roast Sweet Potatoes: Place the baking sheet in the oven and roast the sweet potatoes for 40 to 45 minutes. Stir them once halfway through cooking to guarantee even browning and tenderness.
  3. Sauté Onions: While the sweet potatoes are roasting, heat the remaining 15 ml olive oil in a skillet over medium heat. Add the diced onion and sauté until softened and translucent, about 5 minutes.
  4. Cook the Ground Beef: Add the lean ground beef to the skillet with the sautéed onions. Sprinkle the taco seasoning over the meat and cook, stirring occasionally, until the beef is browned and cooked through, about 8 to 10 minutes.
  5. Assemble the Bowls: Divide the roasted sweet potatoes evenly among four serving bowls. Top each with the cooked ground beef, sliced avocado, and cottage cheese.
  6. Drizzle with Hot Honey and Garnish: Drizzle each bowl with hot honey (about 2 tbsp per bowl). Optionally, garnish with chopped cilantro, red pepper flakes, or a lime wedge for extra freshness and heat. Serve immediately.
