Ingredients

For Pizza Dough:

  • 5 artichoke hearts, sliced
  • 2 portabella mushrooms, chopped
  • 2 tablespoons fresh dill
  • 1 tablespoon lemon juice
  • 1 English cucumber, sliced for topping (optional)
  • Salt and pepper to taste

Instructions

  1. Activate Yeast: Combine lukewarm water (not exceeding 110°F) and yeast in a small bowl. Let it sit for 10 minutes until the mixture is frothy, indicating the yeast is active.

  4. Preheat Oven and Pizza Stone: While dough rises, preheat oven with a pizza stone under the broiler on high for 30 minutes. Then reduce oven to 375°F and continue preheating for an additional 30 minutes.
  5. Roast Vegetables: Arrange sliced cherry tomatoes and artichoke hearts on a parchment-lined baking sheet. Drizzle with olive oil, season with salt, pepper, and parsley. Bake on the pizza stone at 375°F for 10-15 minutes until tomatoes are shriveled and artichokes browned.
  6. Make Tzatziki Sauce: In a bowl, combine Greek yogurt, fresh dill, lemon juice, and minced garlic. Mix well and chill in the refrigerator until ready to use.
  7. Second Dough Rise: Punch down the risen dough and knead on a floured surface for a few minutes. Shape into a disk and let it rise again for 10-30 minutes.
  8. Shape Dough: Roll out dough on a floured surface into a circle or square. Sprinkle cornmeal onto a wooden cutting board or pizza stone if a wooden slide isn’t available to prevent sticking.

  10. Bake Pizza: Bake at 375°F for 10-15 minutes until cheese just melts. Then switch oven to broil and broil for 5-10 minutes until crust is browned and pizza is cooked through.
