Dough

  • 490 grams puff pastry, thawed (2 sheets)

Filling

  • 285 grams sliced deli ham
  • 225 grams Gruyère cheese slices
  • 80 millilitres Dijon mustard (optional)

  • 1 large egg, whisked
  • Everything bagel seasoning (optional)

Instructions

  1. Thaw Pastry: Remove puff pastry sheets from packaging and allow them to thaw until pliable, ready for rolling and cutting.
  2. Preheat Oven and Prepare Baking Sheet: Preheat the oven to 220°C (428°F) and line a large baking sheet with parchment paper for easy cleanup and even baking.
  3. Cut Pastry Sheets: Roll out each thawed puff pastry sheet slightly and cut each into 6 rectangles using a sharp knife or pizza cutter. Optionally, roll gently to form squares for uniform shapes.
  4. Assemble Pastries: Brush the edges of each pastry rectangle with whisked egg to act as glue. Spread Dijon mustard in the center if using. Place a slice of Gruyère cheese and a folded slice of ham on top of the mustard.
  5. Fold and Seal: Fold one corner of each rectangle towards the center, then fold the opposite corner over to fully enclose the filling. Press gently to seal the edges securely.
  6. Prepare for Baking: Arrange the filled pastries spaced evenly on the lined baking sheet. Brush the tops with the remaining egg wash for a golden, glossy finish. Sprinkle everything bagel seasoning on top if desired.
  7. Bake: Place the baking sheet in the preheated oven and bake for 18 to 22 minutes, until the pastries are golden brown, puffed up, and the cheese filling is thoroughly melted.
  8. Cool and Serve: Remove from the oven and allow the ham and cheese pastries to cool briefly before serving warm for the best texture and flavor.
