Delicious and easy-to-make Pigs in Blankets featuring cocktail sausages wrapped in smoked streaky bacon, baked to crispy perfection and drizzled with honey for a sweet and savory finish. Perfect as a party snack or a tasty appetizer.

Ingredients

Bacon & Sausages

  • 15 rashers/strips of smoked streaky bacon
  • 30 cocktail sausages

Glaze

  • 2 tbsp honey

Instructions

  1. Preheat the oven: Set your oven to 200C/400F (fan) to prepare for baking the sausages wrapped in bacon.
  2. Prepare the bacon: Take one rasher of smoked streaky bacon and stretch it out slightly, then carefully slice it in half widthways to create two smaller strips.
  3. Wrap the sausages: Take one cocktail sausage and wrap one half-strip of bacon around it, ensuring the bacon covers the sausage snugly.
  4. Arrange on baking tray: Place the bacon-wrapped sausage on a baking tray with the seam-side down to secure the bacon while cooking.
  5. Repeat wrapping: Continue wrapping each cocktail sausage with half a bacon strip until all 30 sausages are prepared and laid out on the tray.
  6. Bake the sausages: Bake in the preheated oven for 25 minutes, until the sausages are thoroughly cooked and the bacon is crisp and golden.
  7. Add honey glaze: Drizzle 2 tablespoons of honey evenly over the cooked pigs in blankets to add a touch of sweetness.
  8. Final bake: Return the tray to the oven for an additional 5 minutes to allow the honey to caramelize and glaze the bacon-wrapped sausages.
  9. Serve: Remove from the oven, let cool for a minute to avoid the very hot honey, then transfer to a serving plate and enjoy immediately.

Notes

  • Ensure bacon is stretched slightly before slicing to cover the sausages better.
  • Place sausages seam-side down to prevent bacon from unraveling during baking.
  • Honey adds a sweet glaze but can be omitted for a savory-only version.
  • Serve warm for best taste and texture.
  • Use a baking tray lined with foil or parchment paper for easier cleanup.
