Ingredients

Mac and Cheese Mixture

  • 2 cups macaroni and cheese, cooked or leftover
  • 1 tbsp milk or cream (optional, to loosen the mac and cheese)
  • Salt and pepper to taste

Cheese

  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese

Quesadillas

  • 4 large flour tortillas
  • 1 tbsp butter (for greasing the pan)

Instructions

  1. Prepare Mac and Cheese: Reheat the cooked macaroni and cheese in a microwave or on the stovetop until warm. If the mixture is too thick, gently stir in 1 tablespoon of milk or cream to loosen the texture. Season with salt and pepper to taste.
  2. Heat the Skillet: Place a nonstick skillet over medium heat and add 1 tablespoon of butter. Allow the butter to melt and coat the skillet evenly.
  3. Assemble Quesadilla: Place one flour tortilla in the skillet. Evenly spread a layer of the warmed macaroni and cheese over half of the tortilla. Sprinkle 1/4 cup shredded cheddar and a little mozzarella cheese on top of the mac and cheese.
  4. Fold and Cook: Fold the tortilla over the filling to create a half-moon shape. Cook the quesadilla for about 3-4 minutes on one side until golden and crisp, then carefully flip using a spatula and cook for another 3-4 minutes on the other side until the cheese inside has melted and the tortilla is crisp.
  5. Repeat and Serve: Repeat the assembly and cooking process with the remaining tortillas and filling. Slice the quesadillas into wedges and serve warm with salsa or sour cream as desired.
