Ingredients

Dry Ingredients

  • 1.5 cups all-purpose flour
  • 1.5 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/8 teaspoon salt
  • 1.5 teaspoons matcha powder
  • 1/2 cup sugar

Wet Ingredients

  • 3/4 cup almond milk
  • 1 tablespoon apple cider vinegar
  • 1/4 cup coconut oil
  • 1 teaspoon vanilla extract

Glaze

  • 1/2 cup icing sugar
  • 2 tablespoons almond milk
  • 1/2 teaspoon matcha powder
  • 1 teaspoon coconut oil

Instructions

  1. Prepare Almond Milk Mixture: Combine almond milk with apple cider vinegar in a small bowl and let it sit for 5 minutes to curdle, creating a dairy-free buttermilk substitute.
  2. Mix Dry Ingredients: Sift together the all-purpose flour, baking powder, baking soda, salt, and matcha powder into a large mixing bowl. Stir in the sugar until evenly distributed.
  3. Combine Wet Ingredients: In a separate bowl, whisk the almond milk mixture with melted coconut oil and vanilla extract until fully blended.
  4. Make the Batter: Pour the wet ingredients into the dry ingredients and gently mix until just combined. The batter will be thick but do not overmix to keep donuts light and tender.
  5. Fill Donut Pan: Transfer the batter into a piping bag or use a spoon to fill a greased donut pan about three-quarters full to allow for rising.
  6. Bake the Donuts: Preheat the oven to 180°C (350°F). Place the donut pan in the oven and bake for 10 to 12 minutes or until a skewer inserted into the donut comes out clean.
  7. Prepare the Glaze: While the donuts cool, whisk together icing sugar, almond milk, matcha powder, and coconut oil until smooth and glossy.
  8. Glaze the Donuts: Once the donuts have fully cooled, dip each donut into the matcha glaze. Add any desired toppings immediately before the glaze sets to ensure they stick well.

Notes

  • Ensure the batter is not overmixed to keep donuts soft and fluffy.
  • Use a donut pan for best shape and even baking, but muffin tins work as a substitute.
  • Allow the donuts to cool completely before glazing to prevent melting or sliding glaze.
  • Store donuts in an airtight container at room temperature for up to 2 days.
  • For a vegan version, ensure the sugar used is vegan-friendly.
