Ingredients

Matcha Puppy Chow

  • 1 cup (170 g) couverture white chocolate chips
  • ¼ teaspoon salt
  • 4 ½ teaspoon (10 g) matcha powder
  • 4 cups Chex rice cereal

Powdered Sugar Dusting

  • 1 cup (210 g) powdered sugar
  • 2 teaspoons matcha powder

Instructions

  1. Melt the white chocolate. Using a double boiler method, place the white chocolate chips and salt in a heatproof bowl set over a pot of simmering water. Ensure the bowl does not touch the water. Heat gently on low, stirring occasionally until the chocolate is completely melted and smooth.
  2. Sift in the matcha powder. Using a fine-mesh sieve, sift 4 ½ teaspoons of matcha powder into the melted white chocolate to avoid clumps. Stir with a spatula until the mixture is fully combined and smooth.
  3. Mix the melted matcha chocolate with cereal. Place the Chex rice cereal in a large mixing bowl. In three batches, pour the matcha white chocolate over the cereal, folding gently with a rubber spatula to evenly coat all pieces. Allow the mixture to cool slightly to room temperature.
  4. Whisk together powdered sugar and matcha. In a separate bowl, combine 1 cup powdered sugar with 2 teaspoons matcha powder, whisking until fully blended.
  5. Toss with powdered sugar mixture. Transfer the cooled, coated cereal into a large gallon ziplock bag. Add the powdered sugar and matcha mixture, seal the bag, and shake thoroughly until the cereal pieces are evenly coated. Add more powdered sugar if needed to ensure full coverage.
  6. Chill and serve. Spread the coated cereal mixture onto a parchment-lined cookie sheet and refrigerate uncovered for 15-30 minutes to allow cooling and drying. Store the finished puppy chow in an airtight container in the refrigerator to maintain freshness.
