Squash and Seasoning

  • 2 honeynut squash
  • 1 tablespoon olive oil

Cheese

  • 1/4 cup parmesan, grated (recommended Parmigiano-Reggiano)

Instructions

  1. Prep the Oven and Squash: Preheat your oven to 400°F (200°C). Using a large chef’s knife, carefully slice each honeynut squash in half lengthwise. Scoop out the seeds and stringy flesh with a spoon, creating hollow cavities in each half.
  2. Arrange and Oil: Place the squash halves face-up in a baking dish or on a lined baking sheet. Brush the exposed flesh generously with olive oil to help the seasonings stick and enhance roasting.
  3. Season: Sprinkle garlic powder, dried thyme, and dried rosemary evenly over each squash half. Then sprinkle half of the grated Parmesan cheese on top. Season generously with salt and freshly ground black pepper to taste.
  4. Roast: Transfer the baking dish into the preheated oven. Roast the squash for approximately 35 minutes, or until the flesh is tender when pierced with a fork and the edges are slightly browned and caramelized.
