Packed with tender winter vegetables like sweet potatoes, butternut squash, kale, along with sautéed onions and bell peppers, it’s seasoned with garlic, thyme, and optionally topped with melted cheese for extra flavor. Baked to perfection in an oven-safe skillet, this frittata is a delicious way to enjoy seasonal produce in a simple one-pan meal.

Ingredients

For the Frittata

  • 8 large eggs
  • 1/4 cup milk (or a dairy-free alternative)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme (or fresh thyme, chopped)
  • 1 tablespoon olive oil
  • 1 cup diced winter vegetables (such as sweet potatoes, butternut squash, or kale)
  • 1/2 cup diced onion
  • 1/2 cup bell pepper (any color, diced)
  • 1/2 cup shredded cheese (such as cheddar, feta, or goat cheese, optional)

For Garnish (Optional)

  • Fresh herbs (such as parsley or chives)
  • Sliced avocado
  • Hot sauce

Instructions

  1. Preheat the Oven: Preheat your oven to 375°F (190°C) to prepare for baking the frittata later.
  2. Whisk Eggs: In a large mixing bowl, whisk together the eggs, milk, salt, black pepper, garlic powder, and thyme until the mixture is smooth and well combined.
  3. Sauté Vegetables: Heat olive oil in a large oven-safe skillet over medium heat. Add diced onion and bell pepper and sauté for 3-4 minutes until they begin to soften. Then add the diced winter vegetables and continue cooking for 5-7 minutes until all vegetables are tender.
  4. Combine and Cook: Pour the whisked egg mixture evenly over the sautéed vegetables in the skillet. Stir gently to distribute the vegetables throughout. If using, sprinkle the shredded cheese on top. Cook the mixture on the stovetop for 2-3 minutes, just until the edges start to set.
  5. Bake the Frittata: Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the frittata is puffed, firm, and set in the center. A toothpick inserted into the center should come out clean.
  6. Cool and Serve: Allow the frittata to cool for a few minutes to set before slicing. Garnish with fresh herbs, sliced avocado, or a drizzle of hot sauce if desired. Serve warm and enjoy!
