Decadent Snickerdoodle Truffles combining the warm cinnamon flavor of classic snickerdoodles with a rich chocolate coating. These bite-sized treats feature a soft vanilla cake mix base flavored with cinnamon, dipped in smooth melted semi-sweet chocolate, then dusted with cinnamon and powdered sugar for an irresistible finish.

Ingredients

Truffle Dough

  • 1 cup vanilla cake mix
  • 2 tsp ground cinnamon
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 cup powdered sugar

Chocolate Coating

  • 1 cup semi-sweet chocolate chips
  • Additional ground cinnamon, for sprinkling
  • Additional powdered sugar, for sprinkling

Instructions

  1. Prepare the Truffle Dough: In a large bowl, thoroughly mix together the vanilla cake mix, softened butter, eggs, and ground cinnamon until you achieve a smooth, uniform batter.
  2. Chill the Dough: Cover the mixing bowl and place it in the refrigerator for at least one hour to allow the dough to firm up, making it easier to handle for rolling.
  3. Form the Truffle Balls: Once chilled, scoop tablespoon-sized portions of the dough and roll them into smooth balls. Arrange these on a baking sheet lined with parchment paper to prevent sticking.
  4. Melt the Chocolate: Place the semi-sweet chocolate chips in a microwave-safe bowl. Heat them in 30-second intervals, stirring between each, until the chocolate is completely melted and smooth.
  5. Dip and Coat the Truffles: Using a fork or dipping tool, dip each truffle ball into the melted chocolate, ensuring it is fully coated. Allow any excess chocolate to drip off before placing the coated truffles back onto the parchment-lined baking sheet.
  6. Finish with a Sprinkle: While the chocolate is still warm and soft, lightly sprinkle the truffles with extra ground cinnamon and powdered sugar to enhance flavor and presentation.
  7. Set the Truffles: Let the truffles set at room temperature until the chocolate hardens, or refrigerate them to speed up the process. Once firm, they are ready to serve.

Notes

  • Make sure the butter is softened to room temperature for easier mixing.
  • Chilling the dough prevents the truffles from being too sticky to roll.
  • If the chocolate hardens too quickly when dipping, reheat it gently in the microwave for a few seconds.
  • Store truffles in an airtight container in the refrigerator for up to one week.
