Delight in this refreshing and easy-to-make Strawberry Parfait featuring layers of macerated fresh strawberries, creamy Greek yogurt whipped with heavy cream, and crunchy granola or biscuits. Perfect as a light dessert or breakfast treat, these parfaits offer a harmonious blend of sweet, tart, creamy, and crunchy textures with natural flavors and optional honey or maple syrup for added sweetness.

Ingredients

Strawberry Layer

  • 2 cups fresh strawberries, hulled and sliced
  • 2 tablespoons sugar (optional, for macerating the berries)
  • 1 teaspoon fresh lemon juice

Cream Layer

  • 1 cup Greek yogurt, plain or vanilla
  • ½ cup heavy cream, whipped to soft peaks
  • 2 tablespoons honey or maple syrup

Crunch Layer

  • 1 cup granola or crushed digestive biscuits
  • 2 tablespoons chopped nuts (optional, for extra crunch)

Instructions

  1. Prepare the Strawberries: Hull and slice your fresh strawberries into even pieces. In a small bowl, toss the strawberries with sugar (if using) and fresh lemon juice. Let the berries sit for 5–10 minutes to macerate, making them juicier and sweeter.
  2. Whip the Cream: Pour the heavy cream into a mixing bowl. Using a whisk or electric mixer, whip the cream until soft peaks form. For best results, chill the bowl and whisk beforehand to help the cream reach soft peaks faster.
  3. Mix the Yogurt Layer: In another bowl, combine Greek yogurt with honey or maple syrup. Stir gently until smooth and creamy, creating the sweetened yogurt base.
  4. Assemble the Parfaits: Spoon a layer of the yogurt mixture into the bottom of your parfait glasses or jars. Add a layer of granola or crushed biscuits on top of the yogurt. Spoon a layer of macerated strawberries over the granola. Repeat these layers until the glass is full, finishing with a few strawberries on top for garnish. Gently press the layers down with the back of a spoon for clean, even layers.
  5. Add Final Touches: Sprinkle chopped nuts or drizzle additional honey over the top layer if desired. Chill the parfaits in the refrigerator for 30 minutes to allow the flavors to meld. Serve cold for optimal texture and fresh strawberry flavor.

Notes

  • Letting the strawberries macerate enhances their natural sweetness and juiciness.
  • Chilling your mixing equipment before whipping cream helps it form soft peaks more easily.
  • The parfait can be made with plain or vanilla Greek yogurt depending on your sweetness preference.
  • Granola adds a wholesome crunch, while crushed biscuits provide a buttery texture.
  • Optional nuts and drizzles of honey or maple syrup add customization to sweetness and texture.
  • Serve immediately or chill up to 2 hours for best freshness; avoid lengthy refrigeration to prevent sogginess.
