A delightful and refreshing twist on the classic Italian tiramisu, this Strawberry Tiramisu features layers of ladyfingers dipped in a homemade strawberry sauce, creamy mascarpone filling, and fresh sliced strawberries. Perfect for a summer dessert, it’s light, fruity, and beautifully presented in a simple 8×8 baking dish.

Ingredients

For the Strawberry Sauce

  • ⅓ cup strawberry jam
  • 3 Tablespoons water
  • 1 Tablespoon lemon juice

For the Filling

  • 8 ounces mascarpone cheese
  • ½ cup heavy cream
  • ½ cup sugar
  • ½ teaspoon vanilla extract
  • 1 teaspoon lemon zest

For Assembly

  • 24 ladyfingers (Savoiardi brand preferred)
  • 2 cups sliced strawberries

Instructions

  1. Make strawberry sauce: In a small mixing bowl, stir together the strawberry jam, water, and lemon juice until well combined to create a smooth strawberry dipping sauce.
  2. Make filling: In a medium mixing bowl, beat together the mascarpone cheese, heavy cream, sugar, vanilla extract, and lemon zest for about 2 minutes until the mixture becomes thick, creamy, and resembles whipped cream in consistency.
  3. Dip cookies: Quickly dip 12 ladyfinger cookies one at a time into the strawberry sauce, ensuring each is coated but not soggy, then lay them in a single layer at the bottom of an 8×8 square baking dish or a similar sized serving dish.
  4. Spread cream and strawberries: Spread half of the mascarpone cream filling evenly over the layer of dipped ladyfingers, then arrange half of the sliced strawberries on top of the filling.
  5. Make a second layer: Repeat dipping the remaining 12 ladyfingers in the strawberry sauce and place them over the strawberries. Spread the remaining mascarpone cream on top and finish with the remaining sliced strawberries.
  6. Cover and chill: Cover the assembled tiramisu tightly with plastic wrap and refrigerate for at least 8 hours to allow the flavors to meld and the dessert to set.
