Ingredients

Tea Base

  • 10 black tea bags
  • 6 cups boiling water
  • 4 tablespoons granulated sugar

  • 8.8 ounces quick-cooking tapioca pearls

Instructions

  1. Prepare the Tea Base: Bring 6 cups of water to a vigorous boil. Remove from heat and add the black tea bags along with 4 tablespoons of granulated sugar. Stir until the sugar dissolves completely. Let the tea steep until it cools down to room temperature, then remove and discard the tea bags.
  2. Cook the Tapioca Pearls: About 15 minutes before serving, bring a small saucepan filled with water to a rolling boil. Add the quick-cooking tapioca pearls to the boiling water, stirring constantly to prevent them from sticking together. Boil the pearls for 5 to 7 minutes or until they float to the surface and achieve a chewy texture. Drain the pearls and rinse them briefly under cold water to stop the cooking process. Transfer the pearls to a clean bowl.
  3. Assemble the Bubble Tea: Evenly divide the cooked tapioca pearls among four highball glasses. Add ice cubes to each glass to your liking. Pour approximately 1 1/2 cups of the cooled tea into each glass over the ice and pearls. Top off each glass with 2 to 3 tablespoons of whole milk or half-and-half, adjusting the amount to your preferred creaminess. Sweeten further with additional sugar if desired. Serve immediately with large straws or long spoons for enjoying the tapioca pearls.
