This refreshing Vegan Strawberry Milk is a deliciously creamy and naturally sweet plant-based beverage made from fresh or frozen strawberries, pure maple syrup, vanilla extract, and oat milk. Ingredients

For the Strawberry Puree:

  • 1 cup strawberries, fresh or frozen, hulled and washed
  • 2 tablespoons maple syrup or agave syrup
  • 1 teaspoon vanilla extract
  • A splash of water

For Serving:

  • 2 cups oat milk (preferably barista style or any creamy vegan milk of choice)
  • Ice cubes as needed
  • Optional: chopped fresh strawberries for topping

Instructions

  1. Simmer the Strawberries: Place the hulled and washed strawberries into a small saucepan with a splash of water. Bring to a boil over medium heat while stirring, then lower the heat and let it simmer for 5 to 10 minutes, stirring occasionally until the strawberries soften and release their juice.
  2. Add Sweetener and Vanilla: Remove the pan from heat and stir in the maple syrup and vanilla extract. Taste the mixture and adjust sweetness by adding more maple syrup if desired, depending on the natural sweetness of your strawberries.
  3. Blend the Mixture: Using a handheld blender or standard blender, puree the strawberry mixture until smooth. Allow the strawberry puree to cool down to room temperature.
  4. Assemble the Drink: Divide the cooled strawberry puree evenly between two tall glasses. Add ice cubes to each glass, then pour in the cold oat milk to fill the glasses. Stir gently with a straw.
