Ingredients

Cherries Mixture

  • 1 pound fresh cherries, pitted and halved

Cheese Mixture

  • 8 oz mascarpone cheese
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream

  • 16 ladyfingers
  • 1/2 cup brewed espresso, cooled
  • Cocoa powder, for dusting

Instructions

  1. Soak the Cherries: In a small bowl, combine the pitted and halved cherries with Amaretto liqueur and sugar. Let the mixture sit for 30 minutes, stirring occasionally to allow the cherries to absorb the flavors and the sugar to dissolve.
  2. Prepare the Mascarpone Mixture: In a large bowl, whisk together the mascarpone cheese, powdered sugar, and vanilla extract until the mixture is smooth and creamy without lumps.
  3. Whip the Cream: In a separate bowl, beat the heavy cream until stiff peaks form. Carefully fold the whipped cream into the mascarpone mixture, preserving the light and airy texture.
  4. Dip the Ladyfingers: Quickly dip each ladyfinger into the cooled espresso, making sure not to soak them too long to avoid sogginess. Arrange a layer of dipped ladyfingers on the bottom of a serving dish.
  5. Layer the Dessert: Spread half of the mascarpone and cream mixture evenly over the ladyfingers. Then, add half of the soaked cherries on top, distributing them evenly.
