This Orange Coconut Creamsicle Drink Recipe offers a refreshing and creamy cocktail or mocktail option. Combining tropical coconut water and milk with fresh orange and lime juices, it delivers a vibrant flavorscape reminiscent of a creamsicle. The drink is beautifully finished with a toasted coconut rim infused with citrus zest, and can be made with or without alcohol, making it perfect for any occasion.

Ingredients

Margarita Mocktail

  • 1 cup coconut water
  • 1/2 cup canned coconut milk or substitute with heavy cream
  • 1/2 cup orange juice
  • 2-3 tbsp maple syrup or simple syrup
  • 1 oz lime juice
  • 1.5 oz non-alcoholic tequila or substitute with real tequila

Toasted Coconut Rim

  • Toasted shredded coconut (for rimming)
  • Zest of 1/2 lime
  • Zest of 1/2 orange
  • 1 tbsp honey (for sticking rim ingredients to glass)

Garnish (Optional)

  • Dried orange slice
  • Whipped cream (optional topping)

Instructions

  1. Prepare the Toasted Coconut Rim: Mix toasted shredded coconut together with the zest of 1/2 lime and 1/2 orange on a plate. Spread honey on the rim of your glass, then roll the glass in the coconut and zest mixture until evenly coated. Set aside.
  2. Mix the Creamsicle Drink: In a cocktail shaker, combine coconut water, coconut milk (or heavy cream), orange juice, maple or simple syrup, lime juice, and non-alcoholic tequila (or real tequila if preferred). Add ice cubes to fill the shaker halfway. Shake vigorously for about 30 seconds to chill and blend the ingredients well.
  3. Serve: Strain the shaken drink over a glass filled with ice. Garnish with a dried orange slice on the rim. For an extra creamy touch, optionally top with a dollop of whipped cream before serving. Enjoy immediately for the best flavor.

Notes

  • You can easily make this a vegan drink by using maple syrup and coconut milk, skipping the whipped cream or using a dairy-free alternative.
  • Adjust the sweetness by varying the amount of maple syrup or simple syrup to your taste preferences.
  • Non-alcoholic tequila substitutes work well for a mocktail version, but feel free to use real tequila for a boozy cocktail.
  • To toast coconut at home, spread shredded coconut on a baking sheet and toast in a preheated 350°F oven for 5-7 minutes, stirring occasionally, until golden brown.
