Ingredients

Shrimp and Seasoning

  • 500g (1 lb) large shrimp, peeled and deveined
  • 1 tbsp olive oil
  • 1 tbsp butter
  • Salt & black pepper, to taste
  • 4 cloves garlic, minced
  • 1 tsp paprika
  • ½ tsp chili flakes (optional)

Sauce

  • 1 cup heavy cream (or cooking cream)
  • ½ cup chicken broth (or seafood stock)
  • ½ cup grated Parmesan cheese
  • 1 tbsp butter
  • 1 tbsp flour (optional, for thickening)
  • 1 tbsp lemon juice
  • 2 tbsp chopped parsley

Side

  • 2 cups cooked jasmine or basmati rice

Instructions

  1. Cook the rice. Prepare 2 cups of jasmine or basmati rice according to the package instructions. Once cooked, fluff the rice with a fork and keep it warm while you prepare the shrimp and sauce.
  2. Sear the shrimp. Heat 1 tablespoon olive oil and 1 tablespoon butter in a skillet over medium-high heat. Add the shrimp, then season with salt, black pepper, paprika, and chili flakes if using. Cook shrimp for 1 to 2 minutes on each side until they turn pink and opaque. Remove the shrimp from the pan and set aside.
  3. Sauté garlic and prepare the sauce. In the same pan, melt 1 tablespoon butter and sauté the minced garlic for about 30 seconds until fragrant. For a thicker sauce, whisk in 1 tablespoon flour and cook briefly to form a roux.
  4. Add liquids and simmer. Pour in ½ cup chicken broth (or seafood stock) and 1 cup heavy cream. Stir well and let the sauce simmer gently for 2 to 3 minutes until it starts to thicken.
  5. Finish the sauce. Stir in ½ cup grated Parmesan cheese until smooth and creamy. Add 1 tablespoon lemon juice and 2 tablespoons chopped parsley. Taste and adjust seasoning with salt and pepper as needed.
  6. Combine shrimp and sauce. Return the cooked shrimp to the pan, tossing them gently in the creamy sauce. Cook together for another 1 to 2 minutes until the shrimp are heated through.
  7. Serve. Spoon the creamy garlic shrimp over the warm cooked rice. Garnish with additional parsley or a wedge of lemon if desired, and serve immediately.
