This Creamy Mushroom Chicken recipe features tender, seared chicken breasts cooked in a rich and flavorful creamy mushroom sauce with garlic, thyme, and fresh parsley. The dish balances savory mushrooms and a luxurious cream sauce, perfect for a comforting weeknight dinner.

Ingredients

Chicken

  • 2 skinless, boneless chicken breasts, pounded to an even thickness
  • Salt and pepper to taste

Sauce and Cooking

  • 1 tablespoon olive oil
  • 2 tablespoons unsalted butter
  • 2 cloves garlic, freshly minced
  • 8 ounces cremini or button mushrooms, sliced thinly
  • 1/2 cup heavy cream
  • 1/2 cup chicken broth
  • 1 teaspoon fresh thyme
  • 2 tablespoons parsley, chopped
  • Optional: splash of white wine

Instructions

  1. Season the Chicken: Season the chicken breasts on both sides generously with salt and pepper to enhance flavor.
  2. Heat Oil and Butter: In a large skillet over medium-high heat, heat 1 tablespoon olive oil and 1 tablespoon unsalted butter until butter melts and bubbles.
  3. Sear the Chicken: Add the chicken breasts and sear for 4-5 minutes on each side until golden brown. Remove from skillet and set aside on a plate.
  4. Sauté Garlic: In the same skillet, melt the remaining 1 tablespoon butter. Add minced garlic and sauté for about 30 seconds until fragrant.
  5. Cook Mushrooms: Add the sliced mushrooms and cook for 5-7 minutes, stirring occasionally, until softened and their juices are released.
  6. Add Broth and Wine: Pour in chicken broth and optional splash of white wine, stirring well and scraping the skillet’s browned bits for extra flavor.
  7. Simmer Sauce: Reduce heat to medium-low. Add heavy cream and fresh thyme to the skillet, stirring to combine, then let the sauce simmer gently for 5 minutes to thicken.
  8. Return Chicken and Cook Through: Place the chicken breasts back into the skillet, spoon sauce over them, cover, and cook for 5-7 more minutes until the chicken reaches an internal temperature of 165°F (74°C).
  9. Garnish and Serve: Sprinkle chopped parsley over the dish before serving for a fresh finish.

Notes

  • Pounding the chicken breasts to an even thickness ensures they cook evenly.
  • You can substitute cremini mushrooms with button mushrooms as per availability.
  • Optional white wine adds acidity and depth, but can be omitted if preferred or for non-alcoholic versions.
  • Use fresh thyme for the best flavor; dried thyme can be used but reduce quantity to 1/2 teaspoon.
  • Serve this dish with rice, pasta, or crusty bread to soak up the creamy sauce.
