Ingredients

Pasta and Chicken

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook until al dente according to package instructions. Reserve some pasta water before draining and set the pasta aside.

Cook until golden brown and cooked through, about 5-7 minutes per side depending on thickness. Remove from heat and rest before slicing lengthwise into strips.
  3. Make the Sauce Base: In the same skillet, sprinkle the all-purpose flour and cook for 1 minute, stirring constantly to form a roux.
  4. Add Liquid Ingredients: Slowly whisk in chicken broth and heavy cream. Add the pesto, lemon juice, and sun-dried tomatoes, stirring to combine. Allow the sauce to simmer gently until it thickens slightly, about 3-5 minutes.
  5. Add Spinach: Stir in the fresh baby spinach and cook just until wilted, about 1-2 minutes.
  6. Toss Pasta and Sauce: Add the cooked pasta to the sauce and toss to coat evenly. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.
  7. Serve: Plate the pasta and top with the sliced chicken breasts. Garnish with freshly grated Parmesan cheese if desired. Serve immediately for best flavor and texture.
