This Bang Bang Chicken Sandwich features crispy, golden fried chicken breasts coated in a triple-layer breading, topped with a spicy and sweet homemade Bang Bang sauce, fresh lettuce, and tomato slices all nestled in soft brioche buns. It’s a perfect balance of crunchy texture and bold flavors, ideal for a satisfying lunch or dinner.

Ingredients

Chicken and Breading

  • 4 boneless, skinless chicken breasts
  • 1 cup all-purpose flour (seasoned with salt and pepper)
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • Oil for frying (vegetable or canola oil)

Sauce

  • 1/2 cup mayonnaise
  • 3 tablespoons Sriracha sauce
  • 2 tablespoons honey
  • 1 tablespoon fresh lime juice

Sandwich Assembly

  • 4 brioche buns, split
  • Fresh lettuce leaves
  • Tomato slices

Instructions

  1. Preheat and prepare bowls: Preheat your oven to 400°F (200°C). Set up three shallow bowls for a breading station: one with seasoned flour, one with beaten eggs, and one with panko breadcrumbs.
  2. Bread the chicken: Dip each chicken breast into the seasoned flour first, coating evenly. Then dunk it into the beaten eggs, and finally press into the panko breadcrumbs to fully cover the surface. This triple coating ensures a crispy crust.
  3. Fry the chicken: In a large skillet, heat enough oil over medium-high heat to cover the bottom. Fry the chicken breasts for 5-7 minutes on each side until golden brown and cooked through, reaching an internal temperature of 165°F (74°C). Transfer to a baking sheet and keep warm in the oven if desired.
  4. Make the Bang Bang sauce: In a small bowl, whisk together mayonnaise, Sriracha sauce, honey, and lime juice until smooth and well combined. This sauce provides the perfect balance of spicy, sweet, and tangy flavors.
  5. Assemble the sandwich: Spread the Bang Bang sauce on both cut sides of each brioche bun. Layer with fresh lettuce and tomato slices, then place the crispy fried chicken breast on top. Drizzle more sauce over the chicken before closing the sandwiches and serving immediately.

Notes

  • For extra crispiness, double-dip the chicken in egg and panko before frying.
  • You can bake the breaded chicken at 400°F for 20-25 minutes as a healthier alternative to frying.
  • Adjust the amount of Sriracha to control the heat level of the sauce.
  • Leftover sandwiches can be wrapped and refrigerated for up to 2 days but are best enjoyed fresh.
  • Serve with fries or a simple side salad to complete the meal.
