The Chicken Avocado Melt Sandwich is a deliciously satisfying meal that combines tender, pan-seared chicken breasts with creamy avocado slices and melted cheese, all sandwiched between toasted bread spread with a tangy mayo-Dijon mustard blend. Enhanced with fresh tomato and red onion, this sandwich is grilled to golden perfection for a warm, melty experience perfect for lunch or a quick dinner.

Ingredients

Chicken

  • 2 boneless skinless chicken breasts
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Sandwich Fillings

  • 1 avocado, sliced
  • 4 slices of cheese (Swiss, cheddar, or provolone)
  • 1 small red onion, thinly sliced
  • 1 tomato, sliced

Bread and Condiments

  • 4 slices of bread (sourdough, ciabatta, or your choice)
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • Butter or olive oil for grilling the sandwiches

Instructions

  1. Prepare the Chicken: Season the chicken breasts with salt and pepper on both sides. Heat the olive oil in a skillet over medium-high heat. Cook the chicken breasts for about 6-7 minutes on each side, or until fully cooked and no longer pink in the center. Remove from the skillet and let rest for a few minutes before slicing thinly.
  2. Prepare the Avocado and Cheese: Slice the avocado and prepare the cheese slices. Set aside to use during sandwich assembly.
  3. Prepare the Bread: Spread a thin layer of mayonnaise and Dijon mustard on each slice of bread, covering the surface evenly.
  4. Assemble the Sandwiches: On two slices of bread, layer the sliced chicken, avocado slices, cheese, followed by red onion and tomato slices. Top each sandwich with the remaining bread slices, mayo side down.
  5. Grill the Sandwiches: Heat a skillet or grill pan over medium heat and add butter or olive oil. Place the sandwiches in the skillet and cook for about 3-4 minutes per side, pressing gently with a spatula to promote even melting of the cheese and toasting the bread until golden brown.
  6. Serve: Remove the sandwiches from the skillet and let them cool for a minute. Slice each sandwich in half and serve warm for the best experience.

Notes

  • Use any bread of your preference but firmer breads like sourdough or ciabatta work best for grilling.
  • You can substitute the cheese with your favorite melting cheese such as Monterey Jack or mozzarella.
  • Adjust seasoning on the chicken as desired; adding garlic powder or smoked paprika can add extra flavor.
  • For a spicy kick, add a few slices of jalapeño or a dash of hot sauce inside the sandwich.
  • Resting the chicken after cooking helps keep it juicy when slicing.
