Ingredients

For the Salmon

  • 4 6 oz Salmon fillets
  • 1/4 cup Unsalted butter
  • 2 tablespoons Fresh lemon juice
  • 2 cloves Garlic, minced
  • Salt and pepper, to taste
  • Lemon slices, for garnish
  • Fresh parsley, chopped, for garnish

For the Crispy Potatoes

  • 1.5 lbs Baby potatoes, halved
  • 3 tablespoons Olive oil
  • 1 teaspoon Garlic powder
  • 1 teaspoon Paprika
  • Salt and pepper, to taste

For the Broccoli

  • 1 lb Broccoli florets
  • 2 tablespoons Olive oil
  • Salt and pepper, to taste
  • 1 teaspoon Lemon zest (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C) to prepare for roasting the potatoes and broccoli.
  2. Prepare and Roast Potatoes: In a large bowl, toss halved baby potatoes with olive oil, garlic powder, paprika, salt, and pepper until evenly coated. Spread the potatoes on a baking sheet in a single layer and roast in the oven for 20 minutes.
  3. Prepare Broccoli and Continue Roasting: While potatoes roast, toss broccoli florets in a separate bowl with olive oil, salt, and pepper. After potatoes have roasted for 20 minutes, remove the baking sheet and add the broccoli. Return to the oven and roast an additional 15-20 minutes until potatoes are golden and crispy and broccoli is tender.
  4. Make Lemon Butter Sauce: In a skillet over medium heat, melt the butter. Add minced garlic and sauté for about 1 minute until fragrant. Stir in fresh lemon juice, salt, and pepper to make the lemon butter sauce.
  5. Cook Salmon: Push garlic to the side of the skillet and add salmon fillets skin-side down. Cook for 4-5 minutes until the skin is crisp and salmon is mostly cooked through. Flip the fillets and cook for another 3-4 minutes until fully cooked and flaky.
  6. Plate and Garnish: Arrange the crispy potatoes and roasted broccoli on plates alongside the salmon. Drizzle the lemon butter sauce over the salmon. Garnish with lemon slices and chopped fresh parsley before serving.
