Ingredients

Pizza Dough

  • 1 ball Easy pizza dough (or store-bought dough)

Lemon Herb Mixture

  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon water
  • 1 tablespoon fresh parsley, chopped
  • 1 small garlic clove, grated
  • 1 teaspoon lemon zest
  • 1 teaspoon lemon juice
  • ¼ teaspoon fine salt
  • ¼ teaspoon black pepper

Toppings

  • 5 oz (150 grams) fresh mozzarella (or ½ to ⅓ cup shredded firm mozzarella)
  • 1 tablespoon lemon juice (for drizzling)
  • 2 tablespoons grated parmesan cheese
  • 1 tablespoon fresh parsley (for garnish)
  • Freshly ground black pepper, to taste

Optional Toppings

  • Chili flakes
  • Baby arugula or mixed greens
  • Prosciutto
  • Capers
  • Other herbs like basil or thyme

Instructions

  1. Preheat oven and prepare baking surface: Preheat your oven to 475°F (245°C) and place a pizza stone or baking sheet inside to heat up thoroughly, ensuring a crispy crust.
  2. Roll out dough: On a floured surface, roll out the pizza dough to your desired thickness, shaping it into a round or your preferred shape.
  3. Make lemon herb mixture: In a small bowl, combine olive oil, water, chopped fresh parsley, grated garlic, lemon zest, lemon juice, fine salt, and black pepper to create a flavorful lemon herb brush-on sauce.
  4. Brush dough with lemon herb mixture: Evenly brush the lemon herb mixture over the entire surface of the rolled-out pizza dough.
  5. Add cheese toppings: Spread the fresh mozzarella evenly over the dough, then sprinkle grated parmesan cheese on top for added richness and flavor.
  6. Bake the pizza: Carefully transfer the prepared pizza onto the preheated pizza stone or baking sheet inside the oven. Bake for 10–12 minutes, or until the crust is golden brown and the cheese is bubbly and melted.
  7. Finish with lemon juice and garnish: Remove the pizza from the oven, drizzle the remaining tablespoon of lemon juice over the top, and garnish with fresh parsley and freshly ground black pepper.
  8. Add optional toppings and serve: Optionally, add chili flakes, baby arugula or mixed greens, prosciutto, capers, or additional herbs such as basil or thyme. Slice the pizza and serve warm for best flavor.

Notes

  • Use a pizza stone for a crispier crust or a baking sheet if unavailable.
  • Fresh mozzarella provides a creamier texture, but shredded firm mozzarella works well too.
  • Adjust the lemon juice and zest quantities to your taste for more or less tanginess.
  • Optional toppings can be added after baking to keep their textures and flavors fresh.
  • Let the dough rest if using homemade, allowing it to rise for better texture.
