Ingredients

Energy Bites

  • 1 cup pitted Medjool dates (about 13 dates)
  • ¼ cup sunflower seed butter (unsweetened Sunbutter recommended)
  • 1 tsp vanilla extract
  • ⅓ cup chocolate protein powder (32g)
  • ¼ cup cocoa powder (24g)
  • 2 tsp instant coffee
  • Pinch of salt
  • Water (if dough is too dry)

Instructions

  1. Soften the Dates: Place the pitted Medjool dates in a small bowl and cover them with hot water. Let them soak for 5-10 minutes until softened, then drain the water completely.
  2. Blend Dates: Transfer the softened dates to a food processor and blend until they start to break down and form a sticky paste.
  3. Add Remaining Ingredients: Add sunflower seed butter, vanilla extract, chocolate protein powder, cocoa powder, instant coffee, and a pinch of salt to the food processor. Blend thoroughly, stopping a couple of times to scrape down the sides. The mixture should come together into a large sticky ball. Add a small amount of water if the dough is too dry to blend well.
  4. Form Energy Bites: Scoop out tablespoon-sized portions of the dough and roll them into balls with your hands. This recipe yields about 17 energy bites.
  5. Store Properly: Place the energy bites into an airtight container or a resealable bag. Store them in the refrigerator for up to two weeks or freeze for longer storage.

Notes

  • Soaking the dates softens them, making blending easier and improving texture.
  • If the dough is too dry to form balls, add water a teaspoon at a time to reach the right consistency.
