The Pink Coconut Mojito is a refreshing tropical cocktail that combines creamy coconut milk, tangy grapefruit juice, and sweet strawberry syrup with classic mojito elements like fresh mint and lime. This vibrant and fruity drink is perfect for summer gatherings or anytime you want a delightful twist on the traditional mojito.

Ingredients

Liquid Ingredients

  • 1 oz coconut milk
  • 1 oz grapefruit juice
  • 1.5 oz white rum
  • 0.5 oz strawberry simple syrup (adjust to taste)
  • Soda water to top

Fresh Ingredients

  • ½ lime, cut into wedges
  • Handful of fresh strawberries, halved
  • 5 fresh mint leaves

Garnish

  • Fresh mint leaves
  • Lime wedge

Instructions

  1. Muddle: In a shaker or directly in a glass, muddle the halved strawberries, lime wedges, mint leaves, and strawberry simple syrup until the mixture is juicy and fragrant, releasing the flavors of the fresh ingredients.
  2. Add & Shake: Add the coconut milk, grapefruit juice, white rum, and ice to the shaker. Shake gently but thoroughly to combine the ingredients and chill the cocktail.
  3. Strain: Strain the mixture into a highball glass filled with fresh ice to remove pulp and mint solids for a smooth drink.
  4. Top: Top the drink with soda water to your preferred level and stir gently to blend without losing carbonation.
  5. Garnish: Garnish with a sprig of fresh mint and a lime wedge to add a fresh and colorful tropical touch to your mojito.

Notes

  • Adjust the strawberry simple syrup quantity to control sweetness.
  • Use fresh and ripe strawberries for the best flavor.
  • White rum is preferred for a light and balanced taste.
  • Serve immediately to enjoy the freshest mint aroma and fizzy soda.
  • For a non-alcoholic version, omit the rum and add more soda or coconut water.
