A quick and flavorful Sesame Garlic Shrimp served over tender soba noodles, tossed in a savory honey-soy garlic sauce and garnished with sesame seeds and green onions. Perfect for a healthy weeknight dinner that comes together in just 30 minutes.

Ingredients

Shrimp and Marinade

  • 1 pound large shrimp, peeled and deveined, tails on
  • 2 tablespoons soy sauce
  • 1 tablespoon honey or maple syrup
  • 2 cloves garlic, minced
  • 1/2 teaspoon grated fresh ginger (optional)

Noodles and Garnish

  • 8 ounces soba noodles
  • 1 tablespoon vegetable oil
  • 2 tablespoons black and white sesame seeds
  • 2 green onions, chopped

Instructions

  1. Dry the Shrimp: Pat the shrimp thoroughly dry with paper towels to ensure a good sear and to prevent steaming.
  2. Cook the Noodles: Prepare soba noodles according to package instructions. Drain and rinse with cold water immediately to stop cooking and prevent sticking. Set aside.
  3. Make the Sauce: In a small bowl, whisk together soy sauce, honey or maple syrup, minced garlic, and grated ginger (if using) to create the sauce.
  4. Sear the Shrimp: Heat vegetable oil in a large skillet or wok over medium-high heat until shimmering. Add shrimp in a single layer without overcrowding. Cook 1 to 2 minutes per side until pink and opaque. Cook in batches if needed.
  5. Combine Shrimp and Sauce: Return all shrimp to the skillet if cooked in batches. Pour the sauce over the shrimp and cook for 30 seconds to 1 minute, tossing gently until sauce thickens and coats the shrimp.
  6. Toss with Noodles: Add cooked soba noodles to the skillet with shrimp and sauce. Toss thoroughly to coat noodles evenly.
  7. Garnish and Serve: Transfer the shrimp and noodles to a serving bowl. Sprinkle generously with black and white sesame seeds and chopped green onions. Serve immediately.

Notes

  • Make sure to dry shrimp completely to achieve a better sear and avoid steaming.
  • Cooking shrimp quickly at high heat prevents rubbery texture.
  • Rinsing soba noodles with cold water stops the cooking process and prevents sticking.
  • You can substitute honey with maple syrup for a vegan option.
  • Grated fresh ginger is optional but adds a nice zing and depth of flavor.
  • Cook shrimp in batches if your skillet is small to avoid overcrowding and uneven cooking.
