These Sweet Chili Chicken Wraps are a quick and flavorful meal featuring tender, juicy chicken breasts cooked to perfection and combined with a tangy sweet chili sauce, fresh mixed vegetables, and crisp lettuce. Wrapped in wholesome whole wheat tortillas, they make an ideal nutritious lunch or light dinner that’s easy to prepare and packed with vibrant flavors.

Ingredients

Chicken and Sauce

  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 3 cloves fresh garlic, minced
  • 1 cup sweet chili sauce
  • 2 tbsp low-sodium soy sauce
  • 2 tbsp fresh lime juice
  • 1 tbsp olive oil (for cooking)

Wrap Fillings

  • 4 whole wheat tortillas (10-inch)
  • 1 cup mixed vegetables (bell peppers and carrots), sliced
  • 1 cup lettuce leaves (romaine or butter), washed and dried

Instructions

  1. Cook the Chicken: Preheat a skillet over medium heat and add olive oil. Place the chicken breasts in the skillet and cook for 7-8 minutes on each side until they turn golden brown and reach an internal temperature of 165°F (75°C). Remove the chicken from heat and let it rest for a few minutes to retain juices, then slice into strips.
  2. Prepare the Sauce: In a medium bowl, combine the sweet chili sauce, minced garlic, low-sodium soy sauce, and fresh lime juice. Mix well to create a balanced, flavorful sauce mixture.
  3. Assemble the Wraps: Lay out each whole wheat tortilla on a clean surface. Distribute the sliced chicken evenly among tortillas. Add the sliced mixed vegetables and lettuce leaves on top of the chicken. Drizzle the sweet chili sauce mixture over the fillings to add a tangy, spicy kick.
  4. Wrap and Serve: Fold the sides of each tortilla over the filling, then roll tightly to enclose the ingredients and form a neat wrap. Slice each wrap diagonally for easy eating and serve immediately with extra sweet chili sauce on the side for dipping.

Notes

  • For extra crunch, lightly toast the tortillas before assembling.
  • You can substitute chicken breasts with thighs if preferred for juicier meat.
  • Customize the sauce by adding chopped fresh cilantro or a pinch of crushed red pepper flakes for added heat.
  • The wraps can be made ahead and refrigerated; reheat gently before serving.
  • Use gluten-free tortillas if needed to make this recipe gluten-free.
