Instructions

  1. Melt Butter and Cook Garlic: In a medium saucepan, melt 2 tablespoons of unsalted butter over medium heat. Add the minced garlic cloves and cook for 1-2 minutes until fragrant and slightly softened. Be careful not to brown the garlic to avoid bitterness.
  2. Add Liquid and Seasonings: Pour in ¾ cup of heavy cream or your choice of milk or plant-based milk. Stir in ½ teaspoon salt, ¼ teaspoon black pepper, a pinch of nutmeg if desired, and ¼ teaspoon dried oregano or other herbs for added flavor. Bring the mixture to a gentle simmer, then reduce the heat to low to avoid boiling.
  3. Simmer and Thicken: Allow the sauce to simmer gently for 3-5 minutes, stirring occasionally. This will help the sauce to thicken slightly so it can coat the back of a spoon nicely.
  4. Add Parmesan and Adjust Seasoning: Stir in ¼ cup grated Parmesan cheese if you are using it. Taste the sauce and adjust the seasonings as necessary, adding more salt, pepper, or herbs to your liking.
  5. Finish and Store: Remove the sauce from heat once it has reached your desired thickness. Use the sauce warm immediately on your pizza, or let it cool completely before transferring to an airtight container for refrigeration.
